BBQ Cheddar Mini Meatloaf Muffins! 🧀
Happy Thursday, friends! These mini meatloaf muffins are a dinnertime staple in this household. This recipe was built off of my mom’s classic meatloaf – but with a little twist: I added BBQ sauce and cheddar cheese shreds… and then made them MINI. Cause who doesn’t love eating bite-sized food? They’re quick to make, incredibly flavorful, and super kid-friendly! Recipe is below! Love y’all so so much! Xoxo
For the loaves:
• 1 lb 93% ground turkey
• 1/2 small minced onion
• 1 egg
• 3 tbsp BBQ sauce
• 1 tbsp stone ground mustard
• 2 tsp worceshire sauce
• 1/2 tsp each garlic powder + smoked paprika + salt + pepper
• 1/4 cup panko breadcrumbs
• 2oz cheddar cheese shreds
For the sauce:
• 1/4 c ketchup
• 2 Tbsp BBQ sauce
• pinch nutmeg (optional)
• salt and pepper to taste
1. Preheat oven to 375 degrees. Spray a standard muffin tin generously with cooking spray. In a small skillet sprayed lightly with cooking spray over medium heat, add minced onion. Saute for about 5 minutes until crisp-tender. Transfer to a large bowl and allow to cool to room temperature.
2. In the bowl with your cooked onion, add ground turkey, egg, panko breadcrumbs, bbq sauce, mustard, worceshire sauce, garlic, paprika, salt, black pepper and cheddar cheese. Mix with your hands until well combined.
3. Spoon mixture evenly into your prepared muffin tin. You should get 12 uniform mini meatloaves. Bake for 15 minutes.
4. While the loaves are baking, combine all sauce ingredients in a small mixing bowl. Once the timer goes off, remove your loaves from the oven and spoon sauce evenly over each meatloaf muffin. Bake for an additional 10 minutes – or until cooked through.
