Gingerbread Latte Protein Oats! ☕️
The only thing that fills the Venti-sized hole in my heart left by our coffee overlords nixing the iconic beverage 3 years in a row. 🥲
Part 3 of my Starbucks Holiday Drink Oats series pays homage to our missing spiced beverage. 👌🏻 This bowl beautifully intermingles the flavors of strong coffee and classic gingerbread – while packing in enough protein and fiber to keep you full all morning. 🥰 Healthy and delicious AND caffeinated? • 3/4 c strong coffee (I used risebrewingco cold brew)
• 1/4 c milk
• 1/2 c oats
• 1/2 c cauliflower rice (optional)
• 1 tbsp flaxseed
• 1 tbsp molasses
• 2 tbsp mashed banana
• 1 scoop vanilla protein powder
• 1/2 tsp ground ginger
• 1/4 tsp cinnamon
• 1/4 tsp cloves
• 1/2 tsp salt
1. In a small pot over high heat, add coffee, cauliflower rice (if using), and salt. Let the mixture come to a boil, and then add your oats and flaxseed. Reduce heat to a simmer and let cook for about 3-5 minutes – according to package instructions.
2. Once oats are almost finished cooking, add in molasses, banana, and spices. If you’re using whey or casein-based protein, add about 2 tbsp water to a bowl with your protein powder and create a slurry before adding it to your oats – this is so that you don’t get any grainy protein powder chunks in your oatmeal. If using plant-based protein – you can just add it straight into your oats. Mix until well-combined and add your milk. Let cook until desired texture is reached – adding more water or milk if you want thinner oats.
3. Spoon into a bowl and top with diced apples, nut butter, and any other additional toppings. I like adding banana, granola, plant-based creamer, and dried fruit.
