Sometimes you gotta post the second draft of a recipe cause the first wasn’t “quite” right. 🙃
I made two versions of these Mince Pie Baked Oats – and though I was originally convinced the first version (previously filmed) was the one – I’ve decided that the second round should be posted instead. A Reel will happen next week for sure. ✨I’m a perfectionist – but I want to only post the best of the best recipes for you guys. Even if that means living off of baked oats rejects for a week (no complaints).😆

Side note: I’m taking a step back from this platform after Christmas as I start transitioning into more authentic content. I’ll still be posting – don’t worry. It’s just gonna be me taking a day or two off as social media has become not-so-amazing for my mental health as of late. I love you guys soooo much. Ingredients:
• 1/2 c oats (40g)
• 1/2-2/3 scoop vanilla protein powder
• 1/2 tsp baking powder (2g)
• 1 heaped tsp pumpkin or mixed spice (3g)
• 1/4 tsp salt (2g)
• 1/2 small banana
• 1/3 c milk (80ml)
• 1/2 c frozen cauliflower rice (optional) (55g)
• 3 tbsp mincemeat (60g)
• 1 tbsp walnuts or pecans (10g)
Directions:
1. Preheat oven to 400 degrees and spray an oven safe bowl generously with cooking spray.
2. In a high speed blender or food processor, add all ingredients except for mincemeat and nuts and blend until smooth.
3. Spoon into bowl and fold in mincemeat. Top with chopped nuts and bake for 20-25 minutes.
