Cause I’m not getting off the pumpkin train any time soon, y’all! 🚃
Happy Friday, Breakfast Squad! Ending the week on a high note with the baked oats you’ll be making tomorrow morning. 😘
I made this one twice this week – so you KNOW it’s a good one. This bowl is loaded with pumpkin and spices for those peak ✨fall vibes✨ Then add coffee grounds in the batter for that AM caffeine jolt – and you have your fave Autumn beverage in oat form. 🙌🏻
You can use your favorite coffee in this recipe – but I highly recommend a dark roast or espresso for the best flavor. • 1/2 c rolled oats
• 1/2 tsp baking powder
• 1/2 scoop vanilla protein
• heaping tsp pumpkin spice
• 1 tbsp coffee grounds
• 1/4 c pumpkin purée
• 1/2 tsp salt
• 1/3 c milk (or sub MORE brewed coffee or cold brew)
• 1/2 c cauli-rice (optional for health)
1. preheat oven to 400 degrees and spray an oven safe bowl with cooking spray.
2. add all ingredients to a food processor or high speed blender and blend until mostly smooth.
3. spoon batter into bowl and bake for 25-30 minutes. top as desired.
