Oh man oh man, Breakfast Squad! I made these cookies on a whim yesterday as a gingerbread muffin recipe the day prior was less than… successful. 😅 But my loss is certainly your gain! Cause now you guys get this amazing and easy-to-make cookie recipe that you can whip up in less than an hour! 🥰

Ingredients:
• 3/4 c softened butter
• 1/2 c granulated sugar
• 1/2 c packed brown sugar
• 1 egg
• 1/2 tsp vanilla
• 1/4 c molasses
• 2 1/4 c flour
• 2 tsp baking soda
• 1/2 tsp salt
• 2 tsp ginger
• 1 tsp cinnamon
• 1/4 tsp cloves
• pinch nutmeg
Directions:
1. Preheat oven to 350 and line a sheet tray with parchment. In a mixer on medium-high speed, cream together butter and sugars for 5 minutes – until light and fluffy, scraping down the sides ever couple of minutes as needed.
2. Add in egg, vanilla, and molasses and mix for another 1-2 minutes until well combined.
3. Whisk together all dry ingredients and add them into the mixer with the speed on low. Mix until just combined. Using a medium cookie scoop, spoon out equal balls of dough and roll each ball in additional granulated sugar. Place onto sheet a few inches apart (I could fit 8-9) Bake for 10-12 minutes and let cool for 2 minutes on your tray before transferring to a rack.
